A typical cake originating from Verona since the ’60s, it takes its name from its similarity to the Russian fur hat. It is said that it was invented by a pastry chef who worked on ships, and that he was in Odessa when he invented this cake. Composition: The cake has a centre of finely ground almonds combined with sugar, therefore very soft, coated with a fresh puff pastry which is rolled and processed by hand.
